Raw Zucchini Hash with Easy Eggs

Serves: 1 Cooking Time: 15 min


  • 1 organic washed zucchini ( at least 200 grams)
  • 1 organic fresh farm egg
  • 3 fresh taragon strands, herbs removed and stems discarded
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 tbsp lemon juice
  • 1/8 tsp chili flakes
  • salt and pepper



Cut the top an bottom off the zucchini and grate the entire thing onto a plate. Transfer to a bowl and gently toss with fresh tarragon, chili flakes, 1 tbsp of olive oil, lemon juice, salt and pepper.


Plate the raw zucchini hash. Meanwhile warm up a non stick skillet on medium heat pan with 1 tbsp of oil and crack open and egg, cook it for 1-3 minutes before shutting the heat. When the heat is shut, gently use a heat proof spatula to flip it for a few seconds to cook off any excess whites. Plate directly on top of zucchini.


Freshly grated parmesan would be beautiful on this. Feel free to add any fresh herbs you like such as parsley, dill, or fennel fronds.
