Gluten Free Rich Almond Cookies

Ingredients

  • 200 g Almond Meal
  • 43 g butter
  • 43 g grass fed Ghee
  • dash of salt
  • 1 tsp cinnamon
  • 1 tbsp organic flax seed
  • 2 tbsp water
  • 6 tbsp organic granulated sugar

Preheat oven to 350 F.

In a large mixing bowl place the almond meal, sugar, ghee, salt, cinnamon, flax and water. Take the butter and place it in a mug and warm it for 10 seconds in the microwave before adding it to the mixture as well.

Use a spoon to incorporate before using your fingers to form a large cohesive ball.

Take a ping pong ball size pinch of the dough and flatten in between your palms before placing on a baking sheet. Once all cookies are lined on the sheet, cook for 10 minutes. Shut oven and let cool down in the oven.

Store in an airtight container for up to 2 weeks.

Cookies whipped up in a flash. Your inner cookie monster is jumping up with joy right now. Theres not a ton of sugar in these, but they have a ton of flavorful and healthy fat from the almond meal and Ghee and are extremely addicting. Using a flax egg to bind the entire dough together, they dont require a ton of time in the oven to bake up but I recommend letting them cool in there for that extra crunch on the outside. The result of a little extra patience is a crunchy bottom and outer ring on the cookies, and a soft melt in your mouth interior. The little bit of sugar is given extra time to caramelize so its a perfect companion to your morning coffee or a top your yogurt or ice cream bowl.
