Broiled Oregano Tomatoes with Eggs

Serves: 2 Cooking Time: 10 min


  • 2 sliced large organic tomatoes
  • 2 tbsp organic dried oregano
  • 2 tbsp Extra Virgin Olive Oil
  • 2 Extra Large Veggie Fed Eggs
  • 2 oz feta cheese (optional)
  • 2 pieces gluten free or regular toast (optional)
  • Sea salt & Freshly ground pepper



Preheat broiler in oven on HI


In two oval baking dishes place 1 sliced tomato in each then drizzle with 1 tbsp of oil, salt and oregano on each dish


Broil for about 6 minutes, until they are nicely blackened on the skins, and open the oven to crack 1 egg atop each dish


Return to the oven for 2 min before shutting the broiler and let sit for an additional 5 minutes


Serve with freshly ground pepper, feta, toast, and additional drizzle of Extra Virgin Olive oil.
