Oven Baked Greek Chicken Breasts

Ingredients

  • 2 organic chicken breasts
  • 1 potato peeled and diced into 1" pieces
  • 1/4 cup olive oil
  • 1 big tablespoon Greek oregano
  • 1 Boy Choy, washed and stems removed from core
  • Juice from 1/2 lemon

Instructions

Preheat oven to 350 F

In a bowl mix the lemon juice, olive oil, oregano, salt and pepper to make a marinade then throw the diced potatoes in an use a slotted spoon to take them out and lay down on both ends of a baking sheet, leaving the middle free

Take the chicken breasts and dip each side in the marinade and place on baking sheet then wash your hands before handling anything else

Take excess marinade and pour oven the chick and potatoes then lay the boy choy in segments wherever you find space

Bake for 45 min checking at 20 min to turn the potatoes and baste the chicken with any excess marinade

Serve immediately

For a Greek chicken dish, slathered in lemon, olive oil and oregano, I must insist that you make the extra effort to buy GREEK oregano. All oregano is not created equal. Depending on where it is grown, on the mountainside with fresh air, or overlooking the open super salty Mediterranean sea for example, as opposed to a greenhouse in Nebraska will dictate the flavor. You get brownie points if you also happen to use Greek olive oil, and sea salt. The only thing that would make this more Greek is a big hunk of feta topped with more oregano and olive oil. I promise I am not a spokesperson for the exports of the country, they just happen to be superior in quality from anything else I have tried.

This dish is filling and so easy to make it you feel like you have too many errands to run or just busy with life to sit and sauté chicken. Despite the lack of green, hence the addition of the boy choy, it has a surprisingly fresh quality to it. The chicken is cooked for a long time in the oven to ensure the potatoes get cooked through but the marinade ensures that it stays nice and moist on the inside.,One bit of advice, don’t skip the basting half way through the cooking process, this helps ensure a juicy chicken breast and crunchy potatoes.
