Moist Midnight Meatballs

Serves: 4 Cooking Time: 30 min


  • 3/4 lb ground meat
  • 1 egg
  • 2 tbsp whole grain mustard
  • 1 tbsp Italian dried herbs
  • Extra Virgin Olive Oil Spray
  • Salt & Pepper



Preheat oven to 350 F


Spray a cooing sheet with oil


Mix meat, egg, mustard, and dried herbs in a bowl with your hands, immediately form into golf size balls and place on baking sheet. Bake for 20 min

Midnight snack 101, or at least that is how I ate my first meatball though that was not exactly the intended use. Honestly, I was surprised with such few ingredients how flavorful it was and retained so much moisture even though it was cold and had been pre-made for the next day.  It takes about 5 minutes to make the meatball mixture and then all you do it put it in the oven. Sometimes you have to get dirty for good results, in this case use your hands and forgo the spoon.
