Oven Grilled Harissa Salmon

Ingredients

  • 1 lb Wild caught Silver Coho Salmon
  • 1 tsp Harissa paste
  • 6 washed springs parsley
  • 12 halved baby zucchini
  • Extra Virgin Olive Oil Spray
  • Salt & Freshly ground pepper

Instructions

Preheat oven to 350 F

Spray the grill pan with spray and place sliced zucchini in a circular fashion leaving the middle of the pan free to place the salmon

Place the salmon on the middle of the grill pan and season entire plate with salt & pepper

Place harissa over the salmon and lay the parsley springs on top

Cook for 30 min and serve warm.

Fatty Omega 3 wild caught salmon is the perfect accompaniment to the grilled zucchini. For those times you really cant put off writing those checks, or the priority is clearly watching your new favorite series on Netflix instead of standing over a grill to make dinner. Grill pans are great, because you can still have the grilling experience inside you home, or if you live in apartments and are banned from grilling, while getting that nice char on your food. This dish is kept nice and light without added oils that you typically need for frying fish and thus the salmon can stand on its own. The harrisa? A spicy Tunisian condiment made from red chilies, garlic, and tomato paste, it gives the fatty fish a nice kick.
