Insane Spiced Homemade Marshmallows

- 2 envelopes Gelatin
- 1/2 cup water
- 1 cup granulated organic sugar
- 1/2 cup light corn syrup
- 1/3 cup water
- pinch of salt
- 1 tsp cinnamon
- 1 tsp allspice
- 1/2 tsp freshly grated nutmeg
- 1 tsp vanilla paste
- non stick cooking spray
- 1 cup cornstarch
- 1 cup confectioners sugar
Instructions
Take a non stick rectangular pan and place parchment paper on in two sections, allowing it to over lap past the sides so that it forms a small "t". Lightly coat parchment paper with cooking spray
In a small bowl place 1/2 cup cold water and sprinkle the gelatin over it, stir and let bloom
Take the sugar, corn syrup, dash of salt and 1/3 cup of water and mix in a small pot
Bring the pot to a boil, stirring constantly and reduce to medium
Let the sugar dissolve and entire mixture heat up for about 9 minutes, keep watch that the sugar does not burn and stir it constantly
Meanwhile add the bloomed gelatin to a kitchen stand mixer with the whip attachment and beat on slow speed for 2 minutes
When the sugar mixture is ready, slowly add to mixer
Increase the speed to high and beat for about 12 minutes until stiff peaks are formed, the last minute is when the spices and vanilla can be added
Coat a rubber spatula with cooking spray, get ready to move quickly, and shut mixer
Remove the bowl and use spatula to scoop out marshmallow onto the parchment lined pan
Even out and cover with the over hang from parchment paper, let sit at room temperature until set for about 3.5 hours
Mix cornstarch and confectioners sugar in a large bowl and remove marshmallow from pan onto a cutting board
With a large knife, sprayed with cooking spray, cut into 16 pieces and toss no more than 2 pieces at a time in the cornstarch/sugar mixture
Shake off excess cornstarch/sugar mixture before storing in air tight container for up to 2 weeks
The only way to describe these is insane. They are just insanely good. Its perfectly fluffy, with pockets of air that play on your tongue and bursts of spices from the cinnamon, nutmeg and allspice that are the perfect fall combo. This was my first time making marshmallows, I am typically not a huge fan and do not usually gravitate towards them but since it is almost Thanksgiving, I wanted to experiment a bit to see what I will put on my menu since I am hosting.
Every recipe on Toasty Cupboard has its own twist, and these huge white pillows are no exception. They could not be just plain or colored marshmallows, they had to have spice added. I did read a ton of different variations before deciding how to make these, cooking spray or neutral flavored oil being a prominent and constant reminder as they are apparently extremely sticky. Obviously mine were not reminiscent to glue for me to make a comment like that and so you may want to go easy on the spray if you follow this to a tee. Next time, and there will be a next time, I wander into candy land, I may just coat the parchment paper and let my expensive knife set prove its value to me.
