Chocolate Peanut Butter Cookies (vegan)

- 500 g or 1 1/4 cup white flour
- 100 g smooth almond butter
- 16 g flaxseed meal
- 4 tbsp hot water
- dash of salt
- 4 tbsp water
- 50 ml almond milk
- 16 g coconut sugar
- 1 tbsp vanilla extract
- 45 g (vegan) chocolate chips
Instructions
Preheat oven to 350F.
In a small cup place in the flaxseed a dash of salt and the water. Stir and let sit for 5 minutes. You've just created a flax egg.
Grab a large mixing bowl and add the flour, almond butter, almond milk, sugar and extract. Use a spoon to slowly stir a few times before adding the flax egg you made. Continue to use the spoon including the back of it and incorporate the mix until it becomes a dough. It won't resemble it at first but continue to mix and it will come together.
Throw in the chocolate chips and use a coffee spoon to dollop out 20 cookies onto a silicone lined baking sheet.
Bake for 12 min, let cool before eating.
Notes
If the dough is just too dry, add 1 tbsp almond milk into it at a time but careful not to over do it as your going for cookies over cakes. To make it completely vegan, swap the chocolate chips for vegan ones.
Fluffy factor? Check. Low in sugar? Check. Chocolate and nut butter goodness? Someone must be lying to me at this moment. My foodie friends who follow toasty know my huge affinity for the sweet stuff, whether as a snack or the evening ritual of finishing a meal.
These cookies are just perfect for munching on, starting or finishing the day. Paired with a hot tea or a espresso kissed with some almond milk, they are a go for anytime during the day. The sugar is kept low with a tad of the coconut sugar and sugar from the chocolate chips being the only additions. All you have to do is just throw the ingredients into a bowl, mix it with the flax egg that you made before and add in some chocolate chips for that extra decadence. In 12 minutes you have melting chocolate that swims along the fluffed bits of almond butter enhanced flour. If your going totally vegan, which even if your not you wont believe these are, use vegan chocolate chips.
