Airy Chocolate Mousse

- 3 eggs at room temperature, separated
- 1 tsp cream of tartar
- 1 tsp vanilla extract or 1/2 grated tonka bean
- 2 tbsp cocoa powder
- 90 g warm water
- 130 g dark chocolate chunks
- 66 g maple syrup
- dash salt
Instructions
Place the egg whites in stand mixer with the cream of tartar, vanilla, and a dash of salt and beat until stiff peaks form.
In a shallow pan add the warm water, cocoa powder, chocolate chunks and maple syrup until everything is melted and homogenous then remove from heat.
Beat the egg yolks in a separate bowl and add a spoon of the chocolate mixture to temper the egg yolks then transfer to the pan with the chocolate. Add the pan, now with the yolks back to the heat and whisk until a smooth and thickened paste has developed, about 4-5 minutes. Be careful not to burn and scorch the chocolate.
Take the stand mixer bowl with the egg whites and use a plastic spatula to gently fold the chocolate mix into the egg whites until everything is mixed in and no more white appears.
With a large spoon transfer the mousse to 6 containers and chill for 2 hours. Serve chilled with berries and whipped cream.
Notes
No stand mixer? You can use a hand held mixer, just make sure those peaks are really tight, aka flip the bowl over and they stay put tight.
Chocolate. I dont trust people who do not like chocolate. I understand it can depend on the type of “mood” you are in, but honestly I could have any dessert in the world that doesn’t have chocolate and still want to eat a hunk after. There is just something so graceful and final to the meal that must be chocolate.
Of course, when you are prone having two desserts, it is a tad better for your health and waistline if you are leaning towards the lighter side of things. Enter the best of both worlds, the Chocolate Mousse. Made with little added sugar in the form of maple syrup (which has its own vitamins btw!), antioxidant rich cocoa, and airy protein packed egg whites, it is a chocolate dessert that leaves you satisfied without the guilt. Each bite is packed full of a rich chocolate flavor but light on the tongue. The whipped airy whites get folded with a creamy custardy chocolate base and then it gets chilled before you can dig in. To really amp this up, add whipped dairy free cream and berries to the top or dust with cinnamon for a blood sugar regulating kick.
