Serves: 2 as main, 4 as appetizer or side Cooking Time: 15 min

Ingredients

  • 1 package 16 oz frozen organic Kale
  • 1 tbsp organic coconut oil
  • 1 tbsp freshly grated ginger ( or 1 frozen prepackage ginger pulp)
  • 1 tbsp fresh lemon juice
  • salt & pepper
  • 2 tbsp Furikake topping, sesame and seaweed or Parmesan shavings ( optional)

Instructions

Heat the coconut oil in a non stick pan and add the kale.

Stir for 10 minutes until completely de thawed and ass the ginger, lemon juice, salt and pepper.

Top with Furikake season or parmesan shavings.

Since you’ll be using frozen kale and it takes about 15 minutes to make this Warm Ginger Kale side theres really no excuse to not get your greens in. With less than 5 ingredients it a warming tender side dish that pairs well with everything from a grilled steak to fried fish, and of course some grilled veggies drizzled in olive oil. We are all aware by the massive amounts of health data that has been collected, that most people in the developed, yes developed, world do not get enough fiber or greens on a daily basis. Half of my plate is always vegetables, not only because they are anti-inflammatory and full of vitamins and phytonutrients, but mostly because I just love them. The flavor, texture, colors are things that will never be able to be replicated in a boxed pre-made form (Skittles are just one texture) and can only come from nature. Sometimes they’re cooked lightly which bring in crunchy outside and soft interiors, sometimes raw for the full flavor and bounty, and even used as a serving or dipping vessel for pure fun. Now just because I happen to love vegetables, doesn’t mean that you do too. I am a huge proponent of eating what you enjoy and not cutting out any major food groups, eating should be a pleasure. Consider what vegetables you do like and try to experiment but keep in mind the more varied your diet and higher concentration of vegetables will benefit your microbiome, skin, and mental health.
