Bacon and Green Bean Congee

- 1/2 cup Brown Rice Congee
- 3 oz washed and chopped green beans
- 2 slices bacon, roughly chopped
- 1/4 cup chopped parsley
- 1 small chili pepper
- Dash of Smoked Spanish Paprika
- Extra Virgin Olive Oil cooking spray ( or 1 tsp)
- Salt and Freshly Ground Pepper
Instructions
If the Congee is pre-made, place in a bowl and heat, if fresh batch pour directly into bowl
In a non stick pan spray with oil and sauté green beans and chili for 5 min until nicely browned
Add the bacon pieces and continue to stir until bacon cooks down for about 4 min then add the parsley, paprika, salt and pepper until parsley wilts ( 2 min)
Pour green bean and bacon mix directly over the Congee and serve pipping hot
Another amazing way to incorporate Brown Rice Congee, in particular its great for ways to use leftover Congee from a big batch you might have made. The green beans and parsley provide a dose of vegetables first thing in the morning while the chili kick starts your day, sure to wake you up. After the beans get sautéed so they are cooked down a bit but not too much so they still have a crunch, the star, bacon, is added and it crisps up next to the beans while releasing all its juices. The fat from the bacon coats the beans and parsley and allows for the spices to really stick to the vegetables ensuring every bite you take is one you’ll remember.
