Avocado Spinach Salad

- 3 handfuls of pre-washed organic spinach
- 1/2 organic head of parsley
- 2 tbsp organic hemp seeds
- 4 sliced seedless Persian cucumbers
- 1/2 sliced organic Avocado
- 8-12 pieces sun-dried tomatoes in olive oil
- 2 tbsp organic Extra Virgin Olive Oil
- 1 tbsp lemon juice
- 2 tbsp Braggs Apple Cider Vinegar
- Maldon Sea Salt Flakes
- Freshly ground black pepper
Instructions

Place Spinach in bowl. Roughly chop parsley and have it join the spinach.

Slice cucumbers and add those, meanwhile cut a half of an avocado, carefully slice in the shell vertically then horizontally and scoop into salad with a spoon

Top with hemp seeds, sun-dried tomatoes, and lemon juice

Add oil, vinegar, salt and pepper and toss before serving
