10 Minute Egg and Tomatoes

- 2-4 eggs
- 2 tomatoes, sliced to your preference
- 1 tbsp extra virgin olive oil
- Salt & Pepper
- Dash of hot spices and or hot sauce
- 1-2 slices toast
Instructions
Preheat the olive oil on medium to high heat in a nonstick pan while you slice the tomatoes
Add tomatoes with salt & pepper to the pan, turning once after 2 min
Move the tomatoes to the side of the pan and crack the egg directly into the pan
Make it sunny side up, cooking for about 2-3 minutes, turning to get the whites on top to drizzle over the egg and cook
Add salt & pepper and a spice of your liking ( oregano, paprika, or thyme), if using toast, place in toaster
Plate egg first so the yolk stays intact, add tomatoes, and toast ( butter if it you'd like)
If your ever in a big rush in the morning, or wake up and just need food, asap this is is a delicious protein and vitamin packed breakfast that can go from fridge to table in 10 minutes! The tomatoes will cook down depending on how you slice them, the thicker they are the more raw they will be when you plate them. Serve them with whole wheat sourdough toast or gluten free bread to soak up all the yolk goodness. If you’d like, top it with a bit of crumbled parmesan for some nutty flavor and add some hemp seeds to the tomatoes for more protein and omega 3 and 6.
