Turmeric Sushi Rice Side

- 1 cup sushi rice
- 1 1/2 cup water
- dash of rice wine vinegar
- 1 tbsp organic turmeric
- 1/2 cup chopped organic celery
- 1/4 cup organic dry toasted sliced or slivered almonds
- Pat of grass fed organic butter
- Salt & Pepper
Instructions
Place the sushi in a colander and rinse under the sink until the water is clear
In a medium size pot, melt the butter and add the rice giving it a few stirs
Add the chopped celery, salt & pepper, and stir with the rice for about a minute
Add the water and turmeric to the rice, stir and reduce to low heat. Cover and cook for 10 min
Add a dash of rice wine vinegar and return the cover and cook for another 10 min
Once the rice is ready, add 1/4 cup of almonds to the rice
Garnish with your choice of fresh herbs (parsley is nice for its earthiness)
Rummaging through your pantry, you may come across some sushi rice that your not quite sure what to do with ever since you misplaced your bamboo mat ( or your dog thought it was a chew toy). Beautiful yellow colors emerge in this dish from the healthy does of turmeric the sushi rice gets. Couple that with crunch from the celery and sliced almonds and you’ve got an amazing side dish!
