Roasted Delicata Squash

Serves: 4 Cooking Time: 30 min


  • 1 Delicata Squash
  • 2 tbsp organic extra virgin olive oil
  • Hot Pepper flakes
  • Salt & Pepper



Pre-heat oven to 375 degrees


Line a baking sheet with aluminum foil


Cut the squash into quarters and remove the seeds


Slice down each quarter to 1/4 in pieces and place into a bowl with olive oil, salt & pepper, and a good sprinkle of hot pepper flakes and mix


Place the squash on the baking sheet and bake for 30 minutes, turning once after 15 minutes

If vegetables could be considered candy, delicata squash is the inspiration. The outer skin, which by the way resembles a candy wrapper of sorts, is edible and pairs beautifully with the succulent caramelized interior. With only 5 minutes of prep time, theres no excuse not to make this and dig in! You can also make this a main meal by adding a fried egg on top and some greens to the side.
