Sunflower Butter Cookies

- 1/4 cup sun butter
- 3/4 cup white flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup granulated sugar
- 1 egg (omit if vegan and make a flax egg)
- 2 tbsp flax seeds
- 1/2 grated tonga bean ( or use 1/4 tsp vanilla extract)
- dash salt
- 1/4 cup coconut milk
- 1 dark chocolate bar, chopped into rough pieces
Instructions
You have to start by making the dough first. Once the dough is made, let it chill in the fridge overnight.
To making the dough take a bowl and place everything in it except the chopped chocolate bar. Use a spoon to mix it together so its a thick paste like texture and add the chocolate. Cover with plastic wrap and chill in the fridge.
When ready to bake the cookies, preheat the oven to 350F. Place a silicone mat on a baking sheet and use a melon ball scooper to form 12-14 cookie balls. Slightly wet your hands and press down on each cookie ball to flatten it.
Bake for 10-15 minutes until golden and remove from oven.
Notes
If vegan, omit the egg and replace the 2 tbsp of flax seeds with 2 tbsp of flax meal and 2 tbsp of water.
At times, life just does not seem fair, especially if a habit of yours is comparing yourself to others. Enter the super market “natural” “gluten-free” or “healthy” products. Unless you can actually name all the ingredients, chances are you are much better off making it at home. These sun butter cookies, have that healthy seed butter and dark chocolate that are puffed up and airy with little teases of vanilla popping through from the grated tonga. Absolutely perfect to dip into a warm cup of milk while you’re doing math, and since these are light on the waist, you’ll be keeping your supermodel figure.
