Unicorn Cauliflower

- 1 large head organic purple cauliflower
- 4 tbsp extra virgin olive oil
- 3 tbsp white wine vinegar
- 1 tbsp sweet red chili flakes
- 1 tbsp smoked paprika
- 2 tbsp smoked maple seasoning
- 1 tsp salt
Instructions
Wash the cauliflower and pull the outer leaves away. Using a sharp knife begin to cut big slices of the cauliflower off around the core. Discard the core and leaves.
Place the pieces into a large mixing bowl, using your hands to break the florets off into smaller pieces if they haven't come apart yet. Add all the rest of the ingredients (the marinade) and use your hands to blend the mix into the cauliflower bits, cover with aluminum foil and place in the fridge to marinate for 3 hours.
Preheat the oven to 350F and transfer the cauliflower to a shallow baking dish. Cook covered with aluminum foil for 30 minutes and uncovered for 15minutes. Serve warm or at room temperature and garnish with cilantro.
Seasoning. This recipe is all about it and should be in your back pocket for when you want to be lazy in the kitchen but dont feel like sacrificing on flavor. A gourmet grocer or spice shop will have a smokey maple seasoning ( onion and garlic free). I love my spices and often pick them up at every single store I go to that has them, especially when I travel. My spice cabinet just keeps on growing like something out of Stranger Things, it’s honestly a miracle I am able to use most of what I purchase within a year or two of buying them. As for the purple unicorn like cauliflower? You’ll find it at your local farmers market or at Whole Foods when its in season in your area.
After a quick wash and chop, you can pour on the ingredients into the bowl with the florets and get dirty with it by mixing it with your hands. Let it chill out in the fridge before cooking and you’ve got a vegan main course or side dish that pairs perfectly with grilled pork. Slightly caramelized and crunchy on the edges, tender in the middle, and full of a sweet smokey flavor it’s easy to make and fun to eat. Purple cauliflower is similar in nutrition to its white cousin, and full of immune boosting vitamin C, potassium, and good for your gut health.
