Pumpkin Pie Nice Cream

- 3 ripe organic bananas, peeled, cut into 1/2 in pieces and previously frozen
- 1 16 oz can organic pumpkin puree
- 2 tbsp ground cinnamon
- 2 tsp ground nutmeg
- dash organic vanilla extract
- dash salt
- 1/4 cup honey ( if vegan use maple syrup)
- 10 g collagen peptides ( if vegan, omit)
Instructions
Your first step is to grab 3 bananas, peel and chop them and freeze them then your ready to proceed to step 2.
In a blender empty out the pumpkin puree, add all the rest of the ingredients and puree on smoothie setting until smooth, You may want to pause halfway and scrape down the sides if the honey has stuck to the sides, it happens sometimes.
Empty the blender contents into a freezer safe Tupperware and freeze for a minimum of 1 hour.
To serve leftover ice cream, let defrost at room temperature for 30 minutes.

Photograph is served with a simple topping of bee pollen. Crumbled leftover holiday cookies, or fresh fruit are awesome to mix in as well.
Okay, so it take a little bit longer than 10 minutes to get this take on an “ice cream”. The first step is to have previously peeled and chopped bananas that have been frozen if you want to be able to serve this within 30 minutes. If you are not planning on it, then I would suppose you dont need the bananas to be frozen. Its gluten and dairy free, and with the addition of protein from the collagen peptides and fiber from the pumpkin dare I say it gives the $6.99 pint of Halo Top a run for its money. Coming in at about 10 1/2 cup servings, its low in sugar, and costs you about $3.50 to make at home. Double the serving, half the cost and organic, sounds good to me.
Nice cream is basically using frozen bananas for the base of the traditional cream you would use in an ice cream. The banana will bind the ice cream so you can go without the addition of the egg yolk you would need in an ice cream, however it will be frozen solid and still a bit icy even when defrosted. You’ll have to plan to defrost it on the counter top for at least 30 minutes before you can go in there with an ice cream scooper or if your impatient like me, you can microwave it (if the container is microwave safe) for 30-40 seconds. If thats a deal breaker, stick with the real thing, but if your looking for a protein based, low sugar, coconut free alternative to a nightly ritual of ice cream then this is for you. Theres a slight hint of banana in the pumpkin which works quite well with the spices melding through out the ice cream. It serves beautifully alongside a warmed dark chocolate brownie or with fresh fruit.
