Anti-Inflammatory Herbed Cucumber Salad

- 1 organic whole cucumber
- 2 orange roma tomatoes
- 1/2 cup radish micro greens
- 1/4 cup roughly chopped organic cilantro
- 1 stalk finely chopped Thai basil
- 1 stalk roughly chopped organic mint
- zest from 1 lemon
- 2 tbsp Extra Virgin Olive Oil
- 2 tsp Red Wine Vinegar
- Salt & Pepper
Instructions
Cut the cucumber in half and slice on a mandoline length wise. Add it to a bowl with the rest of the ingredients, toss and serve.
Crunch Crunch. I love cucumbers in every form. Seasoned with salt, chili and lemon, pickled, julienned, juiced, and the base for in yogurt sauce (hello, tzatziki). Not only do they help fight inflammation, but they are chock full of water so help to hydrate you in the warmer months in addition to an ample amount of fiber, Vitamin K, and potassium. Unfortunately my friends, they lack a bit in the flavor department which is probably why your so used to seeing them paired with something. in this easy salad the cucumbers are paired with a ton of herbs and lemon zest. Both finely and roughly chopped herbs glue to the cucumber slices with the assistance from another inflammatory fighting friend, olive oil. If your really in need of a re-boot, omit the tomato since they are a bit acidic and replace the red wine vinegar with apple cider vinegar. Its also easy to make, one line directions!
