Expedited Tomato Zucchini Melange

- 1 organic chopped zucchini
- 1 organic chopped roma tomato
- 2 tbsp organic extra virgin olive oil
- 2 -3 handfuls of pre-washed bagged spinach
- 1 tbsp oregano
- 1/2 tsp red pepper chili flakes
- Salt & Pepper
- Big piece of feta
- 3-4 slices watermelon radishes
Instructions
Wash and chop the zucchini and tomato on the same chopping board
Heat 1 tbsp of oil in a pan and throw in the zucchini and tomato
Heat 1 tbsp of oil in the other pan and add spinach, stir and lower heat to medium, cover with a lid for 4 min until spinach is semi wilted
Return to the zucchini and add oregano, chili flakes, salt & pepper, and stir. Cook for another 5-8 min
Grab your crunch vegetable, or cut the radish.
Take the pan with the spinach and stir to get all the steam created from the lid and plate.
Add zucchini melange next to wilted spinach, top with radish and add the hunk of feta right on top
Notes
Watermelon Radish adds a spicy, fresh and necessary crunch to this plate, however I am aware that most people do not have that on the top of their shopping lists. A replacement is 4-5 radishes sliced in half or a small handful of shredded carrots. You need some color besides green, do not forget you eat with your eyes first. Just because your in a rush does not mean you can't enjoy the little things still, like eating.
